Yellow Your Oatmeal
This is a quick oatmeal recipe with all the goodies that will add some more sunshine to your day!
Zucchini can be a sneaky little bugger because you barely taste it in the oatmeal. But be certain that it is giving you a good amount of vitamin C, a gram of fiber and a gram of protein (hey when you add it all up it counts) and almost as much potassium as a banana!
Maca powder will add energy to your day and help improve your mood along with plenty of other benefits.
Chia seeds offer protein, fiber, magnesium, potassium and an added boost of energy.
Cinnamon has tons of antioxidant that are fighting boxing matches for you all day long.
Almonds add more magnesium which your bones need to absorb all the calcium they are giving you as well. Plus nuts have tons of protein to keep you moving and grooving.
Raw honey is just waiting to give you some love! The phytonutrients it gets from flowers (which goes away with heated processed regular honey) gives us better eye health, immune health, and it helps fight cancer.
BOOM! Now, yellow your oatmeal and go out there and save the world!
For oatmeal:
1/2 cup quick oats *
1/4 cup packed shredded zucchini (typically one pretty small)
1 cup almond milk (or any milk of choice)
1 tsp chia seeds
1 tsp maca powder (any powder of choice)
1 tsp cinnamon
1 tsp raw honey (regular honey works too of course!)
5-10 raw almonds (or any nut of choice. Just make certain they are raw.)
*Sometimes I use quinoa instead and add a 1 1/2 cup almond milk
For banana topping:
2 frozen bananas
(take them out a little before to slightly thaw or I like to place them in a bowl close to the stove top where the oatmeal is cooking)
Make oatmeal:
Place the first four ingredients into a pot and bring to a slight boil, then turn down the heat to simmer.
Stir frequently. In about ten minutes oatmeal should be thick and creamy! Take it off the stove.
Make banana topping:
Are you ready for this? Place the two slightly thawed bananas into a food processor or blender and blend until super creamy like ice cream. Voila! It’s incredible.
Put it all together in a bowl of sunshine:
Pour the oatmeal into a bowl. Add cinnamon, honey, almonds, and banana topping. (I don’t always use all the banana topping. I put it back in the freezer for a sweet treat later)
Add-ons:
I love to add fresh nectarines to mine because they taste incredible with the almonds. I also add plums, cherries, apricots, berries, or peaches when I have them!
A teaspoon of pea protein powder is easy to add for a little extra protein kick.
Dried coconut flakes, hemp seeds, flax seeds, and all types of nuts…the list goes on!
